Godorniz (Quail Bird)
Godorniz in English means Quail. They are a small, flavorful bird that can be roasted, broiled, fried, grilled, or sauteed. They have a gamier flavor than chicken, but not to the point of being repulsive to those who dislike it. Many people associate godorniz with restaurant menus or cooking shows, yet godorniz is incredibly simple to make at home. They cook quickly due to their small size. You can have them on the table in under 30 minutes if you're looking for an elegant weeknight meal.
Quail and chicken have a similar flavor profile because they both live on the ground. However, quail is far more flavorful and tender than chicken. Quail has a flavor that is similar to a cross between duck and chicken.
Godorniz (Quail) has been used for cuisine since at least 960 AD, when a mention to fried quail was made at a county fair trade. Quail were semi-domesticated as pets and singing birds in Japan between the seventh and fifteenth centuries. They were, nevertheless, beginning to be consumed for meat and eggs in Japan and many other countries of the world, including the United States, by the early 1900s.
Quails, pheasants, hazel grouses, and partridges can all be cooked. Although the recipe is simple, the taste and presentation are highly festive. To keep the poultry breasts from drying out, wrap them in thin strips of bacon. This will keep the meat juicier and prevent the breasts from drying out. For godorniz, I use little shallots, which are similar in size to garlic greens.
They have a similar structure and color to chicken, but when served as a main meal, you'll probably want two for each person. Serve them with a warm grain salad and roasted grapes on the side. Make mashed potatoes, cornbread dressing, and a wonderful tart cranberry sauce for a small Thanksgiving supper. Another option is to cook quail in sage and butter and serve with glazed carrots.
Godorniz or quails are not commonly found in grocery shops and must be ordered in advance or acquired from a specialty butcher.
Godorniz (Quails) are available bone-in or bone-out, fresh or frozen.
Choose plump birds with creamy, yellowish skin that has a healthy pink tinge. The skin should appear moist but not dripping wet. They should have a neutral odor. If you see quails that are gray in color or smell "off," ignore them.
Cooked godorniz (about 113g) offers 257 calories, 28.5 grams of protein, 16 grams of fat, and no carbs, fiber, or sugar. Iron, vitamin B6 (pyridoxine), zinc, and vitamin B3 are all abundant in quail (niacin).
