Pancita or Menudo was virtually a routine growing up in my house on Saturdays and Sundays. We always woke up to have a warm bowl of pancita with fresh onions, chopped cilantro, dried oregano, and lime wedges on the side to add as desired to taste, and, of course, plenty of freshly cooked corn tortillas from the comal.

Have you ever tried the pancita? If yes, you know how delicious and tasty it is. But what if you don't know how to prepare it? Here is a simple recipe guide for you.

Pancita / Menudo

The classic Mexican soup pancita, also known as menudo or mole de panza ("stomach sauce"), is cooked with cow's stomach (tripe) or pork in a broth with a red chili pepper base. The soup is seasoned with hominy, lime, onions, and oregano. It is distinguished from the Filipino dish of the same name by the absence of tripe and a chili sauce.

The major component in the stew, beef tripe (cow guts), is a source of dispute. Although menudo originated in Mexico, it has become popular among residents of the Southwest United States, and it is widely served in Mexican restaurants throughout the region.

Pancita is typically produced by the entire family, and it is frequently used as a social occasion, such as during wedding receptions, when the groom and bride's families visit each other's homes for a bowl of menudo before and after the ceremony. It's also thought to help with hangovers.

The tripe takes hours to cook, thus pancita takes a long time to prepare. Many ingredients and side dishes (such as salsa) are used, and it is sometimes garnished with chopped onions, chilies, cilantro, and lime juice; it is frequently prepared communally and served at a feast.

Nevertheless, pancita soup is typically sold on weekends in small mom-and-pop kitchens known as "Fondas" or restaurants specializing in traditional Mexican antojitos. Depending on the locale, the soup is known by many names.

Prepared pancita is widely available in supermarkets and restaurants in cosmopolitan regions and other areas with a strong Mexican population in the United States. On Saturday and Sunday, restaurants frequently offer it as a special, and some people believe it helps with hangovers. Pancita or menudo in a can is also available.

Chopped raw onions, oregano, diced chilies (generally serrano), and lemon or lime segments are frequently served over maize or wheat tortillas.

Tripe is almost often included, and some Mexican versions also include honeycomb and librillo meat, as well as the feet and tendons.
